1. Cook the macaroni according to the package directions, but do not add salt
2. While macaroni is cooking, in a large nonstick skillet, he 1 teaspoon of oil over medium heat. Add red onion, bell pepper, and green onions; saute until vegetables begin to soften, about 4 minutes. Remove from heat and set aside
3. Preheat broiler. Drain macaroni; return to pan, add vegetable mixture, cottage cheese, tomato sauce and 3 tablespoons of cheddar cheese. Mix well, heat over low heat until heated through, about 5 minutes.
4. Transfer mixture to shallow baking dish. Sprinkle remaining cheddar cheese over to. Broil 4 inches from heat until browned, about 3 to 5 minutes. Serve immediately
